According to local media reports in Italy, the 31-year-old was rushed to hospital last week suffering with stomach pains. After being taken to hospital, she gave birth to a healthy baby boy a few hours later.
It is understood the woman, who is originally from El Salvador, has named her child Francis after the Pope.
The new mother is quoted by the Ansa news agency as saying: "I did not know I was pregnant. I only felt a stomach pain."
The woman belongs to a convent near the Italian city of Rieti and fellow nuns said they were "surprised" at the news.
Local pastor Don Fabrizio Borrello is also said to have told the local media that the woman planned to take care of the baby.
He said: "I guess she's telling the truth when she says she arrived at the hospital unaware of the pregnancy."
