She explained: "We toyed with having another [child], but Eamonn didn't exactly dance for joy at the idea. He said, 'Really? I'll have five children then!' And it did seem a bit much.
"I also thought, 'You know what, Ruth? Over the age of 40 when the risks for mothers and babies are so much higher, you shouldn't push your luck. You have one beautiful son. Let that be enough'.
"I wouldn't have chosen that age to have a baby. But I just didn't meet the right man to be the father of my child until I met Eamonn. It was late when we finally found each other, but then you can't just have a baby immediately, so it was six years before Jack was born."
The 54-year-old also opened up about her marriage with Holmes, saying: "As a couple, we are able to take some subjects to another level.
"Say it's about snoring (and I'm the snorer in the relationship!), Eamonn can quite justifiably say, 'You're a fine one to talk. You were snoring like a pig last night!'
"Or perhaps we're talking about men and women sharing housework and I could say, 'When's the last time you used a washing machine?' It adds another dimension and keeps it real.
"Let's just say that for me, marrying Eamonn felt like finding the final piece of the jigsaw. It made everything feel complete."
Langsford and Holmes married at Elvetham Hall in Hampshire in June 2010 following a lengthy romance. Their son, Jack, was born in February 2002. Holmes is also a father to three other children from his first marriage.
