The model had originally planned to marry her fiancé in September, but has now said it just isn't possible due to their busy schedules.
Speaking to Star magazine, the 34-year-old explained: "We were going to get married next month, but we had to postpone because of my TV show and his work commitments. We don't want to rush it.
"We talked about running away and doing it in Italy, but I keep changing my mind. I think we'll have a big English, Wigan wedding. Our Big Fat Wigan Wedding!"
Brook also opened up on the possibility of starting a family, adding: "Obviously, one day when I'm blessed enough, I'd love to have a child. But at the moment, it's all just work, work, work."
McIntosh, 27, and Brook met at a New Year's Eve party and dated for three months before announcing their engagement in March 2014. McIntosh was previously said to have been in a relationship with former Miss England Rachel Christie, with who he has a two-year-old son. It is alleged that he broke up with Ms Christie just one week before he met Brook.
Brook, meanwhile, has previously dated Jason Statham, Danny Cipriani and Billy Zane.
