The couple have been in a relationship since the summer of 2015.
They announced the news in the births, deaths and marriages section of The Times newspaper – which is owned by 84-year-old Murdoch.
The notice read: "Mr Rupert Murdoch, father of Prudence, Elisabeth, Lachlan, James, Grace and Chloe Murdoch, and Miss Jerry Hall, mother of Elizabeth, James, Georgia and Gabriel Jagger, are delighted to announce their engagement."
A spokesperson added: "They have loved these past months together," and that they are "thrilled to be getting married and excited about their future."
This will be the fourth marriage for Murdoch, who separated from his wife Wendi Deng in 2013. Former model Hall, 59, previously lived with singer Mick Jagger for a number of years and the couple have four children together before their relationship ended in 1999, but this will be her first marriage.
